Simple & Healthy Chicken Salad
My husband & I started incorporating a clean eating plan in our house this past July. Since then, he has been begging me to find us a healthy chicken salad recipie. (He really misses MAYO!) While Chicken salad is delicious, the mayo is not exactly the healthiest option to have while trying to follow a clean eating plan.
I was poking around the Beachbody Blog looking at some of the delicious recipes and I didn't quite find what I was looking for, but did find plenty of inspiration to go out and try my own thing! I discovered an amazing substitute for Mayo that did not affect the overall taste of the Chicken Salad! Let me know in the comments below if you try out this recipie!
Here is what I came up with:
1 cooked rotisserie chicken, skin removed
12oz can of canned chicken in water, drained
Plain Greek 1% yogurt to taste
3 celery stalks, chopped
1/3 cup of carrot, chopped or shredded
1/3 bell pepper (color of your choosing) chopped
Season with poultry seasoning and black pepper to taste
Lemon Juice (optional- but a delicious add on!!)
In a large mixing bowl place chicken and chopped veggies.
Add in Greek yogurt until you get the consistency you like. For me, I used a little more than half of the individual yogurt cup (Fage brand).
Add in seasonings of black pepper and poultry seasoning to your liking. I added lemon juice to taste as well.
This recipe is a great make ahead and have for a few days of healthy lunches or snacks with crackers!
Add to a bed of lettuce (like spinach or romaine) with Oil & Balsamic Vinegar, and a side of sunflower seeds and strawberries for a complete healthy meal!!
If you are following the 21 Day Fix eating plan, 1 serving (measured out in the red container) including lettuce, fruit and sunflower seeds equals:
1 red, 1.5 green, 1 purple, 1 orange & 1 teaspoon.
